Week Nine and Ten!

The potatoes are just a blooming and growing! We got to see a baby potato….and yes that was suuuuuper exciting!!!!! While I was digging up a gopher trap it happened to be very close to a row of potatoes and there was a tiny potato about the size of nickel down there!!

Did you know ……that different colored potatoes have different colored flowers?!? I had no idea! 

Mac started taking horse back ridding lessons a couple of weeks ago. The smile on his face doesn’t come off until he gets off the horse, it’s so sweet to watch!

At the local rodeo there was mutton bustin… aka a small child holding onto a sheep for dear life…he wanted to do it so he did!!! He lasted about 0.67 seconds 😉 some fellow coworkers came and supported Mac and brought a sign! Mac and Mer both loved the rodeo and could have stayed there all night! 

At night here on the camp ground it is sooooo dark! There are no street lights any where close and because of that you can see stars like I’ve never seen. It is breath taking! 

We still have close encounters with bison…..some in places we like and others not so much! We ourselves have never seen a bison in the garden (only their destructive proof of being there) but a coworker did and got these pictures! So crazy to see that big guy in there! We prefer the little ones….even if they are going through the store 😜

Salt Lake City

I interrupt your weekly ranch update with a review of our take on Salt Lake City!! 

We took two days off in a row, the first time since we’ve been here and snuck out for an adventure! 

The Great Salt Lake: This beaut reminded us of the ocean…salty smell, seagulls, sand and water! But this is no ocean….there only two living things in here! Brine shrimp and brine flies. The saltiness of the lake is 2-7 times saltier than the ocean 🌊 ! We could certainly tell this when the boys got out…their skin and shorts were covered in white! 

Downtown: We went down town for lunch and a walk around. Definitely felt far away from the ranch! We ate lunch at a Belgian cafe. Chase got the machine gun sandwich that was featured on Man vs Food…he won but he wasn’t feeling the best afterward 😬 we walked to the Utah Jazz stadium. Neat to be around, we were there the day before the game five playoff game! 

Donut falls Trail: with a name like that we had to try it out and it did not disappoint! The boys did great and we had a beautiful afternoon under the pines and aspen following a stream up to a waterfall. We had not seen grass, trees or green like that in sooooo long! 

Silver lake: beautiful meadow lake near a few ski resorts….I can not imagine being there during the winter. A sign said that area usually gets 33 feet of snow every winter! But it was beautiful in the spring!! The trail had a few spots that went out on the lake, so so pretty! 

Young Living Essential oil Lavender fields: I had no idea we were going to be driving by this. When we passed it on the way I figured we would have to try to stop by on the way home. They were so kind and welcoming! We just went walking out in the fields and they let us go snooping in their green houses! I will say that having done this gardening work I have a deeper respect for where oils come from. Really pretty and neat just to be able to walk in their lavender fields and see how it all starts. They also use the same drip line we do to irrigate the garden….so maybe we’re doing something right 😜

Food: 

-Big Daddy’s pizza…decent pizza. We were looking for something new and just stumbled upon it and would recommend it. 

-Kluck’s Krispy Chicken… maybe the best fast food fried  chicken I’ve ever had! Would recommend 10/10! 

-Donut Boy….after hiking donut falls we just had to have a donut 🍩 really tasty donut I must say! Not Lamars….but seriously I think the next runner up!

(We ate really healthy can you tell 🙈🙈🙈)

Hotel: 

-Country Inn and Suites…nothing to fancy but just fine for us! Hot breakfast included both mornings and an open indoor pool! And of course a couple of beds to rest and …jump on! 

It was a fun little get away. Certainly felt like we got off the ranch and got to explore something new!! 

Week eight

Feels like we finally made it to a maintenance mode in the garden; no new huge projects….just maintain what we have going on! This week was a bit of a breather woot woot 🙌🏼 

Garden update….it’s all growing….weeds and all 🙈 weeding is now the thing that could always be done. Some days that’s all we do….some days we put more compost here and there. Everything is out of the green house that will be out! We planted some okra and two more different types of melons in the potatoes for “companion planting”….an experiment… we’ll see how it goes!

It’s getting hot most days. We took a half day one day and found the local pool for our two fish! 🐠 🏊‍♂️ ☀️ 

We got to hike this week! Probably the most we’ve done in a week since we’ve been here! 

After church we headed to Wire Pass. Imagine the letter T the top part of the “t” is a 14 mile hike called Buckskin gulch and its the longest slot Canyon in Utah….maybe the world. The bottom part of the “t” is wire pass….it’s a 1.7 mile hike through slot canyons to get to Buckskin gulch. We did the wire pass part of the “T”. It was really neat! In the slot canyon it was drastically cooler than the normal temp. There were parts the boys could touch both sides of the canyon. Had they been older (or we had more water) we probably would have done more but the little over three miles on a 100 degree day was just fine for us! 

We also went into Zion and hiked the East Rim Trail. We brought snacks and water and set off  on the coolest temperature day we’ll probably see until we head north. Highs in the mid 70s made this hike much more relaxing. We think we did about 6 miles round trip. The boys did amazing. We truly had no idea where the trail would lead but we made it literally up a mountain and had a really neat view into the eastern side of Zion. And then we went down and I kid you not Merrick ran about half the way! Literally sprinted. He would run to a shade spot then “rest for energy” and then take off again. He and I had a fun time doing this! He also napped that afternoon 😜 

We planned on having a cowboy meal….aka dress up like cowboys and cook over the open fire. Well, the day before planned dinner Utah was put under a burn ban soooo no fire. But we made the best of it. We lit some candles put a couple logs around them and ate on the floor….all in our cowboy get up of course! Two friends joined us (in their get up as well) and that is who gets all the credit for these pictures! All in all we had a good ole cowboy night!

And incase anyone is wanting to know more about the dress 👗 ….I found that beaut in the laundry room in Tucson in a give away pile before we ever knew we were coming here. It’s a size 3x….I had zero intent of every wearing it but I loved the print and thought I could make button earrings out of it….then we found out we were coming to a ranch so I held off cutting it up….and boy oh boy I don’t know if I ever could cut it up now! 

Fun fact- never in my life have I ever seen so many lizards! They are everywhere!! They scurry here and there, it’s taken a bit to realize it’s not a snake…but I’m still startled by them sometimes!! 

And we got a new humming bird feeder…and I could see and watch them all day! It’s a suction feeder right to window so we are really enjoying our close encounters! 

Week Four

Finally seems like we are done with the few pressing all time consuming projects. This week has thankfully been a bit of a breather! 

The final potato details:

52 rows

24 varieties 

Roughly 2,200 pounds

18 pits- these will yield seed potatoes for the next season- to be harvested this fall and kept in the root cellar until next spring. The picture below on the left is all the extra 50 pound potato bags!

Chase got to dig the pits with a mini excavator so the boys had their own private digger show and it was a memory for all! 

There are two asparagus fields. One mature one that we are harvesting now that we got water lines put down and one that we have done a ton of work with but they just get to rest, grow and mature this year. We cut the asparagus every other morning and take it to the restaurant for them to use!

In the green house: 

  • I planted another 100 seeds of 4 different types of tomatoes
  • Almost everything that has been planted has sprouted 🌱
  • Mac has taken to seed planting! He has planted 16 cucumber plants for the bunnies. He is also recovering spilled sunflower seeds that have sprouted and he is putting them in pots and they are now in the “Schneider science experiment garden” aka their own bed in the green house. 

Mer man turned THREE!!!! He choose all the things for the day and that’s what we did!! Pancakes 🥞 cupcakes 🧁 spaghetti 🍝 hiking 🥾 presents🎁 his first ice cream cone 🍦 He wanted nothing more than to make his own green birthday cupcakes with green frosting and sprinkles…..so of course he got to!!!

This little guy is a special one! We love you so much Merrick! So thankful God made you and let us get to be your parents!

Grand Canyon, Flagstaff and a bit of Sedona

We work a breakfast on Sunday mornings and are off the rest of the day and don’t work again until Wednesday morning. So with these 2.5 days off we left the camper and took a trip and saw some breathtaking and diverse things…..all in Arizona, all within 5 hours of us.

We took off and went north to the Grand Canyon! We checked into our hotel, went and got a pizza, took it to the Grand Canyon to eat it and watch the sunset. Pictures will never do this beauty justice. It is so vast and so BIG. There is a trail on the top that is 16 miles along the rim and at any given point of that trail you could see a new view or a new angle and its just beautiful.

I knew that the Grand Canyon was in Arizona so I expected desert and cactus leading up to the canyon it self. Spoiler alert: wrongo!!! Its like you’re in the Rockies. There are pine trees everywhere, elk running around, and SNOW! I had NO clue it would be like this!

There are a trails that go down into the canyon. We started on one that had a large ice patch on it and after watching a grown man fall on his backside we decided that was not the trail for us. He was fine and in fact encouraged us to try another trail and we were so glad he did.

We hiked down a bit of the South Kaibab trail and it was great. Kid friendly to a degree. Made sure the youngins were on the outside of part trail… no where near the edge. The Grand Canyon was the first time on this whole adventure that we felt limited by the age of our kiddos. We weren’t going to be hiking all the way down and camping at the bottom or riding a mule down to get a better view. There were definitely places along the Grand Canyon that we were shocked to see there was no railing and could see how accidents could happen very easily.

All in all we loved the whole experience and definitely think its a must see and something we’d like to go back to with older kiddos!

We stayed one night at the Grand Canyon and then headed to Flagstaff. Flagstaff is home to Mt. Humphrey, Arizona’s highest point. And in fact a ski resort. We drove an hour on a scenic byway and reached the ski resort. We walked out to the patio had a snack and watched the skiers do their thing. The boys could have watched all day, they loved it. There was a walking trail near by and we hiked a snow packed trail in the middle of aspens and pine trees. Sooooo sooooo pretty!

We stayed one night in Flagstaff. In the morning we walked around the down town area full of restaurants, book shops, cafes, and coffee shops. Had lunch at an old lumber yard turned restaurant. Then we hit the road back home but took the scenic route and boy are we soooo glad we did.

Leaving Flagstaff you can get on Highway 89-A aka Old Creek Canyon Highway. IT IS BEAUTIFUL!!!!! It is full of switch backs and slow driving. But you are going along the creek and there are red cliffs and mountains with pine trees everywhere. It is just pretty and again, another spot where a picture can not capture the beauty you’re surrounded in. Had we known how pretty this was going to be we would have packed a picnic lunch and stopped along the creek and ate.

This highway led us to and through Sedona. Sedona reminded me of Estes Park or some other touristy mountain spot. Tons of shops along the main drag, everyone was there for the view sort of a thing. We got some ice cream and took in the views. And then trekked on back to Tucson.

Arizona has had the most diverse geographical difference all within a few hours making it a real treasure in our eyes. The desert feel, to the red rocks and creeks and canyons to the mountains with pines and aspen to the Grand Canyon. It’s been a grand experience that’s for sure.

Renovations 2.0

When you buy a gallon of paint and your living quarters are roughly 320 square feet, that one gallon of paint can go a loooooong way! I’ve used it here and there to spruce up this space and that space. Moved a decoration here and swapped it there and its been great!

In the hallway area

In the bathroom a touch of paint and a few little extras added. Hanging baskets above the toilet…..that I got from the Dollar Tree and used to be hot pink….and the little towel rack inside the shower. Now all the wet swim suits have a place to go woot woot!

Some paint in the kitchen too. We got a little weather station that tells us the temp inside and outside, the wind and the rain amounts. Really like it up and off the counter top!

We splurged a bit and got some peel and stick wall paper! This is in our bedroom (and a tiny left over piece is in the bathroom if you noticed it!). We got two rolls and got the two walls done and then did it over one door. Now we are on the fence about doing the other door. What do you think, should we get another roll and have a whole wall of this? (seriously we would love to know what you think). It was fairly easy to put up and has held up great! We’ve really liked how much it added to the space.

I used the same paint and painted the wall behind the bed. Then on the lower half of the wall I used the left over peel and stick white brick to update it a little bit. We moved a few decorations here and there. We had the “never stop exploring” sign in our Air BNB at the house and I love it here now!

How we got here….

Not to this literal location but to this point in our lives. 

Practically:

When I was in nursing school they gave examples of allllll the different types of nursing jobs there were and I remember being in awe of two of them. A travel nurse and a cruise ship nurse. Like it is part of your job to go see the world! I was supposed to get married 2 months after getting done with nursing school and there really wasn’t an option to do the travel nurse life. In my irrational fearful brain I told myself if Chase died before we got married I would be travel nurse. Thankful Chase didn’t die… But there’s still alway been a desire to be a travel nurse. 

In the fall of 2019 Chase and I chatted and really felt like God was leading us to travel nursing. We had a year before Mac would be starting school and 2020 could be our travel year. Well that spring the world changed (as you may remember) and all the post-partum (mom baby, the type of nursing job I LOVE) travel nurse jobs were gone. But we still left like God was pushing us towards travel. We were talking to friends and one mentioned that when they retired they would want to do “work camping”. What’s that you say….you go work at a camp ground, get to stay there for free and get paid to do so…. and that’s when the seed was planted and the rest is history! 

We still might try to do a travel nurse stent while we are out and about. When the time comes for us to head to a new spot, we look through nursing jobs and camp ground jobs and pray over it all, trusting God will show us the way. 

Financially: 

On Valentine’s Day of 2016 we had a very romantic evening sorting through our bank statements and credit card statements for the previous three years and seeing where we spent money. We had a wakeup call and changed some things. One of us stopped spending 100s of dollars a month on eating out. And one of us stopped spending 100s of dollars a month on things that we “needed” or got ” just incase” but justified it because it was a great deal in the clearance section or at the thrift store. We began being intentional with each dollar we spent and ended up saving a lot of them. 

Fast forward a bit in 2018 we bought two rental properties, a town home and a house. In 2019 we bought a duplex and went in on flip with a partner. And in January of 2020 we bought another rental house. To date we have four roofs and five tenants. Our business partner for the flip has turned into our property manager while we’ve been on the road and it’s going well!

We can’t live off of our rental properties income, but it does allow us a safety net as we do this travel thing. With our camp ground jobs we are not saving for college but we are not going into debt. We are making the money that we need today, making enough for our food and gas and insurance. The rentals give us the peace of mind that if something “came up” it would be okay.

Relationally: 

We 100% miss our humans. Our family and friends. It’s like when you’re on vacation and you want your people to be there with you to see the things and share the experiences….but you don’t want to leave the vacation….that’s what we’re living in. The time we are getting with our boys is a treasure and only here for a season so we are soaking it up.

I never thought we’d get community out on the road. But we’ve connected with a couple of families and it’s been really sweet. We sang worship songs and watched a bible study and had fellowship…in a camper and it was beautiful. We have two families that we met in the Outer Banks of North Carolina that have traveled here to do camper life with us for a bit. And we’ve met a couple more families here and it’s just amazing how God orchestrates it all. It has been beautiful to see and a loud reminder of how He provides. We can look back and see how He has brought this whole journey together and know He has the future covered as well!

Work These Days

Work in AZ looks a little different than it did in NC. In NC I led activities and Chase helped with those some but primarily did mostly guest services…picked up trash, mowed, took care of the pool that sort of stuff. Here we are both only helping with activities. Sometimes we go together and the kids join, and sometimes it is just one of us. We have a boss that comes up with the schedule, the activities, makes the plans and then we help execute the event. She takes our ideas and input and is great to work with.

There are pluses and minuses to both doing the same thing but I think we would both prefer to be doing different things, just to add a little variety to each day. 

Another big difference is the population that we are working with. In NC it was families with kiddos that were staying there for the week. Here it’s either 65+ couples that are here for 6 months or families with kiddos that are here for 1-3 months. So unlike the almost set schedule and same weekly events we did in NC here we are always trying to help come up with new ideas; some for kids some for adults and some for families. There are a few that are consistent ie: bingo and trivia….and you better not change those (especially bingo).

The Olive Tree

On one side of our camper is a lemon tree, we walk out the door and see it. On the other side there is an olive tree. Inside the camper most our windows hold a view of this olive tree. When you are standing at the kitchen sink you see the olive tree. When you are at the dinning room table you can see the olive tree. It’s really been on my heart lately that Noah sent out the dove and it came back with an olive branch 🕊. 

I’ve read the passage a few times lately in Gen. 7 & 8 and a few things really struck me. Noah and his family were on an ark, it was not a quick and easy type of thing. They had been on the same ark for over a year. A year stuck on a large boat filled with animals. A year stuck on a boat without electricity, plumbing or grocery delivery. They had not been off, out, or without the ark this entire time. Life smelled like they had been on a boat for weeks and weeks and weeks….. filled with animals. There was still water outside, water everywhere outside.

But Noah sent out a dove and finding no place to rest it came back to Noah. Noah again sent a dove out and this time it brought back an olive branch. Oh the joy this must have brought!

Before the promise of the rainbow, there was the hope from the olive branch. The hope that things were changing. No matter the season, no matter the ark you feel shut up in, no matter how bad life stinks…. open the window and send out the dove. There is always hope!

Romans 5:5 “And this HOPE will not lead to disappointment. For we know how dearly God loves us, because he has given us the Holy Spirit to fill our hearts with his love.”

What’s it like to be with family ALL the time?!?

Honestly it is absolutely wonderful! Right now in this stage of parenting we give the discipline and then give hugs and cuddles afterward. We are still the hero and the people they want to be around more than anything and this is something I do not take lightly. I know there will be a day coming when friends will be cooler and they will want to be anywhere but near us and when we discipline, it is not going to be followed up with cuddles. So this mama is soaking up every minute of this life. 

We get to go to work together. Our kiddos know what it means to clock in and out. They see us meet strangers every single day and how to have conversations with them. They know how to introduce themselves and ask a person’s name and how they are. 

We are not sending them to school and practices and here and there and having to correct whatever they’ve seen or heard from the world. Right now we get to be the filter of what goes in. And again it will not be like this forever so this is a season and opportunity I’m not taking lightly. We see and hear everything that’s going on around them. So when we do see the kid at the playground being a terrible big brother we are able to chat about us and our actions and why we do what we do. We get to talk about being a Schneider and what that means and looks like.

Our kids are still kids so of course we have to parent. Right now there are a few things we say all the time, such as, “just because someone else makes a bad choice does not mean we have to” and to the little one it’s more about using your words and not just fussing and hitting. We go through this mantra….do dogs talk…. no….. do trees talk…. no….. can you talk….yes….God made so many things but you are the only one that can talk….so use your words.

We have not escaped being parents but we have escaped a lot of the other stressors that make parenting and balancing all the things so tough. This season of being together all the time has been a true blessing and one I am so so so thankful we have gotten to experience.
